Whole Chicken in Crockpot

Hey!
It's been awhile since I've posted a meal on here! With Thanksgiving just getting over and Christmas coming up we are all busy! So I thought I'd share this easy Crockpot Chicken that tastes like a rotisserie chicken!  You can throw it in the crockpot in the morning and don't have to worry about it until supper time ;)
Tyler and I both loved this!

WHOLE CHICKEN IN THE CROCK

1 Whole Chicken (rinsed inside and out)
Seasoning of your choice I used:
Season Salt
Pepper
Onion Powder
Garlic Salt
Foil

Make about 7 or 8 balls of foil and place on the bottom of the crockpot

Sprinkle the chicken with all of your seasonings and place BREAST SIDE UP in the crock.

Cook on Low for 8 hours
Thats all there is to it! When you go to take it out of the crock it will literally just fall apart! Yumm! I served ours with a baked potato.


7 or 8 balls of foil on bottom of Crock

Place seasoned chicken Breast side up on top of foil

Cook on low 8 hrs

So Good! It will just fall apart!

Chocolate-Dipped Ritz

Happy December!!
Time for trees, lights, Christmas Music and BAKING! :). 

These Cookies are one of my favorite Christmas treats!!! My mom makes them every year...this is my first year giving them a try and they are easyy!!

CHOCOLATE-DIPPED RITZ

80 ritz crackers
Peanut butter
1 package Baking Chocolate squares (you can use both white and semi sweet like I did or just one or the other :) )

Spread peanut butter on a ritz cracker and Sandwich another ritz cracker on top. Continue with all crackers. 
Melt chocolate squares as directed. 
Using a fork dip sandwiched crackers in chocolate. Make sure they are completely coated. 
Place on wax paper to cool. Use a fork to drizzle more chocolate over for decoration!

And this is what you'll have! Yummm!

Granny's Apple Pie

I went to visit my Grandparents for a couple days this past week. We had so much fun! Grandpa taught me how to make homemade Apple Juice yummm!
And grandma taught me how to make German Chicken and Dumplings my fav!!

Grandpa gave me a whole bag of Apples from his apple tree to bring home so I made my first Apple Pie! It turned out delicious!!

And my husband approved as well :)!

DOUBLE CRUST:
2 C. Flour
1 teaspoon salt
2/3 C. Shortening
5-7 Tablespoons Cold Water

Mix flour, salt, and shortening. Sprinkle in water 1 tablespoon at a time. And press with fork. Then form dough into a ball. Separate into 2 balls.  Roll the first o e out and press into pie plate. Add filling and then roll out 2nd dough ball. Place ontop and press edges with fork. 

FILLING:
6-8 Apples
1 C. Sugar
1 tablespoon flour
3/4 teaspoons cinnamon
1 teaspoon butter

Mix all together except butter.  Place apple mixture in crust. And cuz teaspoon of butter in fourths and place over apples      Top with 2 Nd crust and cut slots in top of crust. Brush crust with 1 egg white.  Bake 350 for 45 min.

HaLlOwEeN SuPpEr


Happy Halloween!

Tonight for the first time Tyler and I are going to get to hand out candy to the kiddos that are out Trick or Treating! We are so excited!! And in between that I have prepared a Spooktastic Halloween Meal! I thought I'd share what I have so far JUST IN CASE you need an idea for tonight! :)

For an APPETIZER I made this Witches Hat Cheeseball!


CHEESEBALL:

8oz. Cream Cheese
3/4 teaspoons Garlic Powder
1/4 teaspoon Season Salt
1/4 teaspoon dried Thyme
1/4 teaspoon dried Basil
1/4 teaspoon celery salt
Black pepper

Mix all together and refridgerate for at least 30 mintues. Then shape however you would like and COVER with black pepper! (I used Slices of String Cheese for the square.


For the Main Course we will be having Jack-O-Lantern Stuffed Peppers

2-4 Orange or Yellow Peppers, Cut top off, take out seeds and cut face into side.
1 lb. Ground Beef
1 tablespoon Worcestire
2 cans Tomato Sauce
1/2 Cup Rice, cooked
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
Salt and Pepper
Shredded Cheese

Cook beef and rice. Mix with all other ingredients. Brush a little tomato sauce on outside of peppers. Then fill pepper with beef and rice mixture. Bake at 350 for 1 hour.


DESSERT!--Will be Dirt Cake with Sour Gummi's 



1 Cup Powdered Sugar
1 Stick of Butter
8 oz Cream Cheese
3 1/2 Cups Milk
8 oz. Cool whip
6 oz package Instant Vanilla Pudding
1 lb. Oreos

Cream together first 3 ingredients. In a separate bowl mix together milk and Pudding. Add cool whip to the pudding mixture, then add in the sugar mixture. Crush the oreos. In a bowl layer Oreos, then Pudding Mixture, etc. Top with Worms!

DRINKS! We will be having Fruit Punch mixed with 7 up and these Eye Balls will be our Ice Cubes! Creeeeepy!




1 Can Lychees (They are a canned fruit found in the Canned Fruit Aisle)
1 Can Blueberries (or you can use fresh)

Fill each Lychee with a Blueberry, place on foil lined baking sheet and freeze for at least 1 hour. Add to drink of your choice!

And there it is! Sounds yummy! right?!

Chicken Wings in the Oven

Sundays are usually a day for Football watching and YUMMY Food!
Yesterday, though we had a lot of yardwork to get done and our neighbors were kind enough to come help us out! So I made these wings for lunch and they were a big hit!!-Spicy, crispy, messy and DELICIOUS! If you love wings you must give these a try!

CHICKEN WINGS: Serves 4-5 people

*4 lbs. Chicken Wings
*2 Tablespoons Baking Powder
*3/4 teaspoons Salt
*Sauce (2 Recipes to follow)

1-Preheat the oven to 250.
2-Place a wire rack into a foil-lined, rimmed baking sheet. (I used the rack where I usually put my cookies to cool.)
3-Spray with non-stick cooking spray
4-Pat wings dry with a papertowel and place into a large bowl. Toss with baking powder and salt until the wings are evenly coated.
5-Arange wings skin side up on the rack. Place on the lower oven rack and bake 30 min.
6-Move wings to upper oven rack and turn oven to 425 and bake another 45-50 minutes. Turn baking sheet around halfway through. Remove from oven and make your sauce. Toss chicken with the sauce, place on serving tray and Serve!

HONEY BBQ SAUCE:
*1/2 Cup of your favorite BBQ Sauce--I used Famous Daves Texas Pit
*3 Tablespoons Honey
*Hot Sauce to taste

Mix all together and toss with wings. This one was delicious and you can make it as spicy or non-spicy as you would like :)

BUFFALO SAUCE:
*1/2 Cup Hot Sauce
*1 Tablspoon Molasses
*4 Tablespoons Butter

Mix together and toss with wings. This one is VERY hot, but good!

Popcorn Balls

I remember when I was really little Mom would make us popcorn balls and we just loved them! 

I haven't had them for years! So I looked up a recipe and gave it a try and they turned out pretty good! 

POPCORN BALLS:
 9 cups plain popped popcorn
1 cup granulated sugar
1/3 cup light corn syrup
1/3 cup water
1 teaspoon distilled white vinegar
1 teaspoon kosher salt
4 tablespoons unsalted butter (1/2 stick), cut into small pieces
1/2 teaspoon vanilla extract

Coat a large heatproof bowl with butter, vegetable oil, or cooking spray and place popcorn in the bowl.
Place sugar, corn syrup, water, vinegar, and salt in a medium saucepan and stir to combine.
 Place over heat, stirring until sugar is dissolved. Bring to a boil and cook until mixture registers 260°F on a candy thermometer, about 5 to 7 minutes. Remove from heat and stir in butter and vanilla until melted and smooth.
Immediately drizzle sugar mixture over popcorn and stir continuously with a rubber spatula, scraping the bottom of the bowl, until popcorn is thoroughly coated and cool enough to handle, about 3 minutes.
Using buttered or oiled hands, tightly press mixture into 3-inch rounds. Place on waxed or parchment paper to cool completely, about 15 to 20 minutes.

Fall Puppy Chow

Here is a fun and easy way to turn Puppy Chow into a yummy fall snack! Great for any party or just to snack on for the family! :)

Just make your normal puppy chow and poor in some Reese's pieces right before serving! 

Here's the Puppy Chow recipe I have:

PUPPY CHOW:
*9 C. Check cereal
*1/2 C. Peanut butter
*1 C. Semi Sweet Chocolate Chips
*1 1/2 C. powdered Sugar

In a medium saucepan on stove melt the chocolate chips. 
Add in the peanut butter and stir until smooth
Pour cereal into large bowl and pour the chocolate mixture over it. Stir until all cereal is covered  
In a large Baggie pour in the powdered sugar and add cereal. Shake until cereal is covered! Pour into a serving dish and add Reese's pieces! :)

Mini Pumpkin Bread

I made this recipe today for the weekend and it smells and tastes delicious!! 

It's so cute because it makes 6 mini loaves! So it's great to giveaway for Fall Gifts!! 

Here it is! Enjoy! 

MINI PUMPKIN BREAD

FOR THE BREAD
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 cup vegetable oil
1/2 cup apple sauce
1 1/2 cups sugar
1/2 cup  brown sugar, packed
4 eggs 
1 15-ounce can pumpkin puree
2/3 cup  water

STREUSEL TOPPING
1/2 cup) brown sugar
1/2 cup all-purpose flour
2 teaspoons ground cinnamon
1/4 cup butter

BREAD: Preheat oven to 350 degrees. Lightly spray 6 mini or 3 7×3-inch loaf pans with nonstick cooking spray with flour, or grease and flour each one; set aside.

In a large bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves; set aside.

In a separate bowl combine the oil and apple sauce. Stir in the sugars until combined, then add the eggs, one at a time, mixing well between each addition. Stir in the pumpkin until thoroughly combined. Stir in the water. Sprinkle about half of the flour mixture over the wet ingredients and mix until just combined. Add the remaining flour mixture. Divide the batter evenly between the prepared pans and set aside while you mix the streusel topping.

STEUSEL: In a medium bowl, mix the sugar, flour, and cinnamon together, whisking until thoroughly combined. Drizzle the melted butter over the mixture and stir with a spoon until you have a mixture that resembles lumpy wet sand. Do not break up the clumps too much.

Divide the streusel evenly between the pans, sprinkling it over the top of the bread batter to cover it completely.

Bake mini loaves, three at a time on a rimmed baking sheet, for 20 minutes. Rotate and bake another 20 min, until a toothpick inserted in the center comes out clean. If making large loaves, bake all 3 7×3-inch loaves on a rimmed baking sheet for 25 minutes. Rotate  and bake for another 25 to 27 minutes, until a toothpick inserted in the center comes out clean. Allow to cool at least 10 minutes before serving.

Fettucheesy Alfredo

Hey!

I was in the mood for pasta last night, but wanted to try something new!...So I found this recipe in the Recipe Box my mom gave me a couple years ago! It's Fettucine Alfredo, but it was pretty cheesy...So I'm gonna call it Fettucheesy Alfredo :)

This dish was good! The sauce is homemade so it had a lot of flavor. yum!

FETTUCHEESY ALFREDO:

SAUCE:
*8oz Cream Cheese
*1/2 C. Milk
*1/2 C. Butter
*3/4 C. Parmesan Cheese

*8oz. Fettucine Noodles
*2-3 Chicken Breasts

1-For the Sauce: Heat the cream cheese, milk, butter and parmesan cheese in a sauce pan until all melted and heated through.

2-Cook Fettucine according to package directions. Drain and drizzle in a little olive oil.

3- Cube and cook chicken breasts. Add to noodles. Pour sauce over noodles and mix. Ready to serve!


Brown the chicken in a skillet


Cooking sauce, chicken and noodles at once..to make it go faster!

The sauce...Its pretty thick...you can add more milk to thin if needed.

Cookies N' Cream Cake

Happy Monday!

My mom and her husband came to visit this last weekend so I thought I would make us all a cake to enjoy over the weekend!

I chose this Cookies N' Cream Cake out of the Herreid Centennial Cookbook and it was Fantastic!! Very moist with an amazing flavor!

COOKIES N' CREAM CAKE: (This recipe makes 2 round or square pan cakes)
*1 package White Cake Mix
*1 1/4 C. Water
*1/3 C. Oil
*3 Egg Whites
*1 C. coarsely crushed Oreos (Just throw the WHOLE oreo in a food processor and pulse until crushed)

FROSTING:
*3 C. Powdered Sugar
*3/4 C. Shortening
*1 teaspoon Vanilla
*2 Egg Whites

Combine all ingredients except oreos. Beat until moistened, then beat 2 min on high speed. Gentrly stir in cookies. Put mix into 2 round or square pans. Bake at 350 for 30 min. Cool 10 min. Take out of pants and cool completely. Then frost.

Frosting: Combine 1/2 C. powdered sugar, shortening and vanilla and egg whites, blend well. Beat in remaining sugar until smooth and creamy; frost cake.

Bacon-Wrapped Jambalaya Stuffed Chicken

Hey!

This chicken is DELICIOUS! I'm definitely adding it to my "List of things to cook When guests come over"!

I found this recipe when I was digging through all my old recipe cards. And I'm so glad I found it, because its a winner :)

We absolutely LOVED it...Tyler told me 3 times that dinner was Fabulous. Ready for the recipe?!

BACON-WRAPPED-JAMBALAYA -STUFFED CHICKEN:
*8 Slices Bacon
*1 Onion, Chopped
*1/2 Red Bell Pepper, Chopped
*4 oz. shrimp, peeled, deveined (I used frozen, ready to eat shrimp so all i had to do was heat them up in the skillet)
*1 C. Crumbled Cornbread, (I used a packet of Cornbread mix and mixed with 2/3 C. Milk and bake for 19 min. then crumble and add)
*Salt and Pepper
*4 boneless chicken breasts

In a large skillet, cook bacon over medium heat for about 1 1/2 min on each side (only half cooked). Transfer to paper towel lined plate.

Add onion and bell pepper to skillet, cook about 3 minutes. Then stir in the shrimp and cook till heated through. Stir in cornbread and season with salt and pepper.

Cut a slit in center of chicken and fill with the shrimp mixture. Wrap 2 slices of bacon around each Chicken Breasts and seal with toothpick.

Wipe out skillet and add chicken cook about 10 minutes on each side, covered. Until chicken is through and bacon is crispy!

Stuffed the chicken breasts with the Shrimp Mixture

Wrap with 2 slices of bacon and cook in skillet.

Pepper Crusted Porkloin

And finally the Main Course! Pepper Crusted Porkloin!....We were SO full by this time...we honestly only had a few bites and saved the rest for leftovers haha.

Tyler loved this!....It wasn't my favorite, but it was good!....To me the seasoning was too strong, but Tyler loves things salty and seasoned.

PEPPER CRUSTED PORK LOIN:

*Pork Loin
*3 Tablespoons Dijon Mustard
*1 Tablespoon Buttermilk
*2 teaspoons Thyme
*2 teaspoons Pepper
*1/4 teaspoon salt
2/3 Cups fresh bread crumbs

In a small bowl mix the mustard, buttermilk, thyme, pepper, and salt and spread over the Pork loin

Crumble bread in a food processer and press onto the meat. Place pork in a shallow roasting pan. Cover and bake at 425 for 15 min. Uncover and bake 40 min longer. We had to bake probably an extra 30 min.

Twice Baked Potatoes

These are also a Favorite of mine!! My hubby really enjoyed them as well!! Twice Baked Potatoes! My mom used to cook these alot when we were younger and i just LOVE them!! yummy! All good things combined into one dish!

I cooked this as our side lastnight! (By this time we were both pretty full! And we still have the main course coming! :)

TWICE BAKED POTATO:

*2 large baking potatoes
*1/4 Cup chopped Onion
*1/4 Cup butter
*1/4 Cup Milk
*1/4 Cup Sour Cream (You can't taste it in these...just makes the potatoes more creamy!)
*Salt and Pepper
1 Cup shredded cheese
*Paprika

Wash potatoes and poke holes all over with a fork.

Bake at 400 degrees for 1hr 20min. Remove and cut potatoes in half lengthwise. Scoop out the insides and place into a large bowl, mash.

Saute onion in a skillet and add to potato bowl. Add milk, sour cream, salt, pepper and cheese. Mix together with a mixer. Spoon mixture back into potato shells.

Sprinkle tops with a little bit of cheese and Paprika. Bake at 350 for 25 minutes until heated through.

You can stuff these ahead of time and refridgerate or freeze. Then just reheat in oven when ready to serve.

Crab Stuffed Mushrooms

For our Appetizer lastnight...I cooked up some Crab Stuffed Mushrooms! I used to make these all the time when I lived by myself...I think I got the recipe for my mom? These are my FAVORITE! I was a little nervous to cook them for Tyler because he always tells me he doesn't like mushrooms, but guess what?!.........

He REALLLLLYYY liked these!! He said they have great flavor, which they definitely do!! yumm

CRAB STUFFED MUSHROOMS:

*1 lb large Mushrooms
*1/4 Cup Celery
*2 Tablespoons Onion
*2 Tablespoons Red Pepper
*1/2 lb Crab Meat
*2 Cups Oyster Crackers
* 6 slices White American Cheese
*1/2 Cup water
*1/2 Cup Shredded cheddar
*1/4 teaspoon Garlic Powder
*1/2 teaspoon Old Bay Seasoning
*1/4 teaspoon Black pepper
*1 Egg

Was your mushrooms and pop out the stems. They pull out SUPER easy. Place the stems into a bowl. And place the Mushrooms into a buttered baking dish

Chop up about 1/2 to 3/4 of the mushroom stems And add to a large bowl.

Chop up celery, onion and red pepper and Saute in 2 Tablespoons of butter for 2 minutes.

Add sauted veggies to the bowl with the mushroom stems. Chop up the Crab Meat and add. Then Add rest of ingredients to bowl EXCEPT the White American Cheese slices.

Spoon about 1 teaspoon of the mixture into each mushroom cap. Then place the Cheese slices on top of the Mushrooms.

Bake at 350 for 15  minutes...or until heated through and cheese is melted!

**This recipe is pretty lenient you can add more or less of each ingredient. Also this recipe makes a ton of the "Stuffing!" So..you can either buy more mushrooms to fill OR put the rest of the Stuffing into a baggie and freeze for next time :)

I used Imitation Crab Meat...found in freezer section by the fish.

Fill mushroom cups with a teaspoon of the stuffing

Cover with White American Cheese and bake!

Ready to Chow down!

Homemade Garlic Butter Breadsticks

I served homemade, fresh out of the oven Garlic Butter Breadsticks! Tyler ate these right up!! They were nice and soft, garlicy and delicious. Definitely a winner!!

GARLIC BUTTER BREADSTICKS:
*1 1/2 Cups Warm Water
*1 packet of Active Dry Yeast OR 2 1/4 teaspoons
*2 Tablespoons Sugar
*4 1/4 Cups flour
*1 Tablespoon Salt


GARLIC BUTTER:
*1 Stick Butter
*2 teaspoons garlic powder
*1 teaspoon Salt

In a large bowl, add water and sugar, then add yeast. Cover bowl and let sit for 10 min, until yeast is dissolved.

In a separate bowl, mix flour and salt. Add to yeast mixture. Melt butter and drizzle into mixture. Mix with a wooden spoon until well combined, then knead with hands until a smooth dough forms. Grease a cookie sheet. Pull off small pieces from dough and form breadsticks, place on cookie sheet. Cover and let rise 1 hour.

Preheat oven to 400. Bake breadsticks for 7 minutes. Melt butter and add garlic powder and salt. Remove breadsticks and brush on 1/2 of the butter mixture.

Bake breadsticks for 8 more minutes, remove and brush with remaining butter.

**This recipe makes a TON of dough! So I put the left over dough in the freezer and will make again soon!

Homemade Salad Dressing

Hey!

Yesterday I had the idea to cook a Big, Fabulous meal for my hard-working, wonderful love of my life!    Alot of the food I cooked was new recipes so Tyler was really a trooper! But it turned out Amazing!

I cooked so much new food that I decided to split each "course" into its own Post. So....The first course was a Salad with a Copy Cat Olive Garden-Homemade Dressing! yummy! :)

I REALLY enjoyed the dressing...Tyler said it was pretty "vinegary" (if thats a word!) And he didn't like that it was runny.

HOMEMADE SALAD DRESSING:

  • *1/2 cup mayonnaise
  • *1/3 cup white vinegar
  • *1 teaspoon vegetable oil
  • *2 tablespoons light corn syrup
  • *2 tablespoons grated Parmesan cheese
  • *2 tablespoons grated Romano cheese
  • *1/4 teaspoon garlic salt, or 1 garlic clove, minced
  • *1/2 teaspoon dried Italian seasoning
  • *1/2 teaspoon dried parsley flakes
  • *1 tablespoon lemon juice
  • *1 teaspoon Sugar (more if needed to help even out the tanginess)
Blend everything together and chill in fridge before serving! Super easy! 
Mixed everything together in a medium sized bowl.

Pour over a delicious Salad!

Fresh Summer Squash

Hey everyone!! I'm baaaaaack :)!

We are getting all settled into our new town and our new house! And I'm back to cookin' again! It feels great :)

We love being back closer to home for many reasons...but ONE reason is for all the fresh garden vegetables we are getting from family and friends!! YUM! My plan is to start our own garden this coming year..I"m VERY excited!

Anyways....we got some Garden Summer Squash this week and I have NEVER tried it, let alone cooked it...can you believe it?! SO I looked on Pinterest for some recipes and I tried 2 :). The first one I tried was Baked. The second one was Sauteed. They were both pretty good! Tyler didn't care for the Baked version. But i LOVED them Sauteed....LOTS of flavoring!!

Here they are!

Baked Summer Squash:
*3lbs squash (I used 2 squash)
*1/2 Cup Butter
*1/2 Cup Onion
*2 eggs, lightly beaten
*1 Tablespoon Sugar
*1 Teaspoon Salt
*1/2 teaspoon pepper
*1 Cup fresh bread crumbs

1- Slice the squash and boil until tender. (About 15 minutes) Drain, and mash.
2-Preheat oven to 375
3- Combine mashed squash, 1/2 of the butter, onion, eggs, sugar, salt and pepper. Place into a casserole dish.
4-Put 2 slices bread into a Food processor. Mix with rest of butter using a fork and sprinkle on top of the squash mixture. Bake 45 minutes.

......And its ready to eat! 


SECOND RECIPE:

Saute Summer Squash:
*1/4 Cup onion
*1 Garlic Clove
*Squash (any amount)
*1/2 teaspoon Oregano
*Salt and Pepper

1-Drizzle Olive Oil in a large skillet.
2-Add Onion and sauté for about 3 minutes.
3-Add squash and cook 8 minutes.
4-Add garlic, oregano, salt and pepper. Stir together!
5-We didn't have any cheese :( But if you do add some on top! yummy!!



All ready to eat!
