Chicken Cordon Bleu

Happy April Fool's Day! Don't let anyone fool ya :). Tyler made me promise not to play any jokes on him haha...So I'm being nice this year!
What did you all have for Easter Dinner?! Since it was just Tyler and I...I didn't want to cook a big ham, so thought we try something different. I found this recipe for Chicken Cordon Bleu on Pinterest. I was a little nervous, but it turned out AMAZING!!! It was soooo good! :) And Tyler LOVED it!
Give it a try!

This is how they turned out! Delicious! Don't they look yummy?!


It calls for Swiss Cheese, but I used shredded Mozzarella and Deli Ham. Put the cheese on the ham and roll it up.


Cut a slice (lengthwise) in the chicken breast, don't cut all way the through. And stuff it with 2 ham rolls. And seal the breast with a toothpick. Refridgerate for 20 minutes. Get everything else ready while it refridgerates! Multi-tasking ;)

I got to use my Food Processor for the first time ever! I loved it! To chop up the bread slices and Ritz crackers. Drizzle in the butter and spread them in a pan.
 


You will cook this for 3-5 minutes
 
 
Get the flour, beaten egg with mustard and crumbs ready for the chicken breasts. Then dip the chicken into the flour, egg, then crumbs and place in baking dish! Bake 25-30 mintues.
 

Chicken Cordon Bleu Recipe: The Recipe makes 4 breasts. Total Time: 1 hr.
*25 Ritz Crackers
*4 Slices Bread
*6 Tablespoons Butter
*8 Slices Deli Ham
*2 C. Shredded Mozzarella or Swiss Cheese
*4 chicken Breasts
*Salt and Pepper
*3 Eggs
*2 Tablespoons Dijon Mustard
*1 Cup Flour
 
1-Preheat oven to 450
2-Cut a slice, lengthwise, into chicken breasts...don't cut all the way through. Place shredded cheese in middle of a piece of ham and roll up. Stuff each breasts with 2 ham roll ups.Seal closed with toothpicks. Season with Salt and Pepper. Refridgerate for 20 mintues.
3-Pulse bread and crackers in food processor until ground. Drizzle in melted butter. Transfer crumbs to a baking sheet and bake for 3-5 minutes. Stir occasionally till lightly brown.
4-In a dish beat eggs and dijon mustard. In a separate bowl pour in flour.
5-Dip chicken into flour, then egg mixture, then crumbs and place chicken in baking dish. Bake on lowest rack for 10 mintues. Lower oven to 400 and move chicken to middle rack and cook an additional 25-30 minutes.
 
I served this with Garlic Mashed Potatoes and Crescent rolls! A very yummy meal! Enjoy :)

FANTASTIC Sloppy Joes!

Hey again! So many good recipes I had to share another one today...This one is sooooo Good and VERY flavorful...Tyler ate 4 of them in one sitting!!...I'd say that's a good sign ;)

Here we go...Recipe for the Best Sloppy Joe's Ever!

*Vegetable Oil
*2 Onions
*2 1/2 lbs Ground Beef
*2 Tablespoons Tomato Paste
*2/3 Cup BBQ Sauce (It calls for smokey, but I just used Original)
*1/2 Cup Ketchup
*1/4 Cup Soy Sauce
*1/4 Cup Worcestire Sauce
*8-12 Buns

Heat Oil in skillet. Add Onions and cook 4 min. Add beef, cook till brown. Stir in Tomato Paste and stir until all the beef is covered. Add rest of ingredients and bring to boil. Cook 4-5 minutes. Ready to serve!

I put mine in the crockpot on "Warm" and just let it set all day until we were ready to eat! Mmmmm!!
Oh I also cut this recipe in half! Since there's only 2 of us!

Pioneer Womans Calzones and Homemade Marinara Sauce

Happy Easter Week! I LOVE holidays so fun to try new foods and be more creative!
My mom tried out this recipe and said it was AMAZING so she gave it to me and I made it and she was right its DELICIOUS!
These 2 recipes come from Ree, Pioneer Woman. She's a Wonderful with cook with great recipes!
Just an FYI this recipe makes a TON! so if theres only a couple of you I would recommend cutting it in half :)

 
 
 
Recipe for Calzones:
 
*1 lb.Bread Dough You can use frozen (I made mine in the Bread machine )
*1 T. Butter
*1 Onion
*1lb. Italian or Breakfast Sausage
*1/2 teaspoon Italian Seasoning
*1/4 teaspoon Red pepper flakes
*1 1/2 Cup Mozzarella
*2 Tablesoons Parsley
*15 oz. Ricotta Cheese
*1/2 Cup Parmesan
*1/2 teaspoon salt
*2 Eggs + 1 beaten egg
*Pepper
*I also added Pepperonis on the inside of the calzones....If you want supreme just add the veggies to the skillet and cook and put into the Calzone...Be creative! :)
 
Prepare dough and let rise 1 hour.
Preheat oven to 400. Melt butter in skillet. Add onions and cook about 2 minutes. Add sausage and cook. Add Italian Seasoning and Red Pepper flakes. Remove from heat and allow to cool.
 
In a separate bowl combine ricotta, Mozzarella, Parmesan, salt, pepper, and 2 eggs. Stir in Sausage mixture.
 
Split dough into little balls and roll out each ball until paper thin. Spoon filling onto 1/2 of dough circle.
Fold dough over and seal with fork. Brush calzone with beaten egg. Bake 10-13 Mintues and serve with Warm Marinara Sauce.

Marinara Sauce:
*Olive Oil
*3-4 Garlic Cloves
*1/2 Cup White Wine OR chicken Broth
*3 Cans crushed tomatoes (I used diced, it worked but it was more runny)
*Salt and Pepper
*Pinch of Sugar
 
Add Olive Oil to hot pan. Throw in garlic and onions and stir. Add White Wine OR chicken broth and cook until liquid decreases by 1/2. Add crushed tomatoes and stir. Add salt, pepper, and sugar. Simmer 30 mintues.
 
Very yummmmy!!! :)

Lucky Charm Treats

It's almost St. Pattys Day! I wanted to make a cute treat to celebrate...I found these Lucky Charm Bars on Pinterest!
They are very easy and taste yummy!!
Give 'em a try!

Recipe:
*3 tablespoons butter
*2 1/2 cups marshmallows
*5 cups Lucky charm cereal

Melt the butter in a pan. Add marshmallows stir until melted. Then add the cereal and stir until everything's mixed together.
Grease a pan. And spread the bars into pan. Let cool a little And Enjoy!!

Homemade Bread Bowl & Potato Soup

Hey!
Long time no blogging...It's been a busy month!...I got married to the love of my life in February!! Then we went on the best honeymoon ever...PUNTA CANA!! It was a blast, I definitely recommend it!

Anyways, I tried a new recipe last night .. I found the Cheesy Potato Soup on Pinterest from the Lil' Luna blog. http://lilluna.com/cheesy-potato-soup/.  It was delish....and Tyler loved it as well! He said it was "an extravagant meal" :)

So here's the Recipe!

Bread Bowl: Serves 6 (I cut the recipe in half for the two of us)

*2 C. + 4 Tablespoons Warm Water
*2 packages yeast= 5 1/2 teaspoons
*1/2 C. Butter, melted
*2 Tablespoons Sugar
*3 teaspoons Salt
* 6 1/2 C. Flour

Using a large mixing bowl, add warm water and sprinkle in yeast. Let dissolve for a few minutes until yeast becomes foamy. Add melted butter, sugar and salt and mix until combined.
Gradually add Flour. Knead dough 5 min. PUnch dough down and form into 6 equal sized balls. Place on a greased cookie sheet and let rise until doubled (I let mine rise for an hour and it like tripled in size)
Preheat oven to 425 and bake 20 minutes until golden brown. Let cook and cut off the top of the bread and remove bread from the inside. Fill with SOup!

Cheesy Potato Soup:
 
*1 package cubed/diced hashbrowns
*2 cans Cream of Chicken Soup
*1 can Cream of Celery Soup
*1 pint Half & Half
*1 1/2 C. Cheddar Cheese
*1/2 Butter
*Salt and Pepper
 
Melt butter in crockpot. Add remaining ingredients except cheese, salt and pepper.
Cook on High for 3-4 hours
Add Cheese, salt and pepper.
When in bowl I topped with bacon pieces and cheese!
 
Its very thick and creamy and has a great flavor! :)

Oven Fried Chicken

Good Morning!
I really need to get better at posting new recipes! I found a whole bunch of new recipes this week that I'm so excited to try!
This one I found in a newspaper and it is delicious!! And soooo easy!
Its Oven fried Chicken and I served it with Mashed Potatoes and Chicken Gravy!

Here is the Declicious recipe!

Oven Fried Chicken
*1/4 C. Flour
*1 1/2 teaspoon seased salt
*1/2 teaspoon oregano
*1/4 teaspoon pepper
*3-4 Chicken breasts
*1/4 C. Milk
*1 Tablsepoon Butter

1-Preheat oven to 425.
2-Spray a baking pan.
3- Mix Flour, Seasoned Salt, Oregano, and Pepper in a baking dish.
4-Moisten chicken with Milk, then coat with flour mixture.
5-Place in pan and drizzle with butter
6-Bake 15-20 minutes

I think this would be a good meal to serve if you were having guests over ;)

HAPPY NEW YEAR!!

Happy New Year!
Sorry it has been sooo long since I've posted!....It's been a busy past few weeks with Christmas, the New Year and trying to finish up our Wedding planning!! Yayy!! :)

Anyways...I'm baaaack!! With another yummy recipe :). This one I got from my mom! She used to make every once in awhile when we were kids....TACO SALAD! This one is good for a weekend or football day.

Taco Salad
*1 Head of lettuce
*1 onion
* 2 tomatoes (optional)
* 8oz shredded cheese
* 1 bag of taco chips
*1 pound ground beef

Sauce:
1 pint Catalina Dressing
8 oz tomato sauce
taco Seasoning

1-Brown and drain beef
2-Mix sauce ingredients in a bowl and add onion, beef and cheese
3-I add lettuce a little at a time when I eat it...otherwise if you want you can mix it together with the other ingredients but it does get soggy. Same with the chips just add to ur own plate!
